Chorizo, basil and mozzarella chicken breasts on new potatoes

Lovely one coming up... nothing new there right šŸ˜‰


So simple, so tasty and a good one for entertaining if you have friends for dinner and your trying to think of a winner… ohhh I’m a poet and I didn’t know it!! It looks pretty impressive too šŸ‘


My tip mentioned below is, when you are filling your chicken, if the mozzarella is too tall for you slits, cut it down a bit so it fits better. Itā€˜s not the end of the world if the whole slice doesn’t go all the way in. Enjoy my lovelies…


Ingredients

  • 4 chicken breasts

  • 220g ring of chorizo, thinly sliced

  • 2 mozzarella balls sliced into about 4mm slices

  • 1 bunch of fresh basil

  • 1kg Bag of new potatoes

  • Dried Italian seasoning or oregano

  • Olive oil

  • Flaked salt

  • Ground black pepper


Line 2 roasting trays with baking paper. One for your potatoes and one for your chicken. Pre heat your oven to 200 degrees fan.


We are starting with your potatoes.

Give them a quick wash but leave the skins on.

Cut them into around 2-3cm pieces.. with new potatoes, this usually means leave them whole or cut them in half.

Put them straight onto one of your prepped trays, dab them dry with some kitchen roll then add a good glug of olive oil, a teaspoon of your herbs and a very generous pinch of salt and pepper and mix in.. best way is to get dirty with your hands.

You can easily tell weather you have not enough of one thing but remember you can always add more but you can’t take it away so go steady if you’re unsure!

Put them in your pre heated oven.


Whilst these are roasting for 20mins, prep the chicken.


Put your chicken breasts on a chopping board and make slits around 1cm apart .. make sure you don’t go all the way through to the bottom, you need it to stay together.

In each slit put 2 leaves of fresh basil, a slice of mozzarella** (read tip above) and 2/3 slices of chorizo.


Once they are all ready, move to your other prepped baking tray with a spatula and season with a sprinkle of salt, pepper and dried herbs on top.


After 20mins take out your potatoes and give them a shuffle around then back in the oven. Leave them in there for another 10mins then add the chicken to the oven too.

Cook for another 25mins or until the chicken is no longer pink and the potatoes are a nice roasted brown colour.


Turn the oven off.


To serve, put a few potatoes on a warmed plate then put the chicken on top of them. Put back in the oven for a couple of minutes until everything has married together!
