Chicken wing nibbles - 2 ways!

I had never really bought wings unless I was going crab fishing. FYI that’s a good tip, cheap and easy to tie on your string and the crabs are used to bacon so they swarm for something different!! I‘m talking off a bridge for fun by the way, not deadliest catch type crab fishing. Anyway, I digress.. these couple of marinades make some lovely tasty little wings and again they are so cheap!! Healthy, satisfying, filling, fun, tasty beyond words and better than some ready done tasteless mass produced ones. Grab a finger bowl for the eating part, get stuck in and get messy. Enjoy..

Ingredients


Greek -

  • Juice of 1 lemon

  • 4 cloves of crushed roast garlic (see below)

  • Teaspoon of Salt

  • Teaspoon of crushed black Pepper

  • 100ml ish of Olive Oil

  • 1 generous tablespoon of oregano

  • 1 tablespoon of red wine Vinegar


To roast garlic, put the cloves in the middle of a square piece of foil, touch of oil, wrap them in the foil and put them in the oven for around 15mins at 180degrees. They will be juicy and sweeter when they come out 🤤 you can crush them with a fork. Then...


In a big bowl mix everything together. It should end up very liquid like, add more oil or a touch more vinegar if it’s not.



Mellow BBQ -

  • 2 tablespoons of runny Honey

  • 1 teaspoon of Salt

  • 1 teaspoon of ground black Pepper

  • 2 tablespoons of Soy sauce

  • Good glug of Olive Oil

  • Grated fresh ginger (thumb size piece)

  • 1 tablespoon of Cajun seasoning

  • 1 tablespoon of Paprika


In a big bowl mix everything together. This one should be a bit thicker than the Greek marinade and glossy!


Wings -

Get as many as you want. You can get 20 wings from a butchers for about £3-4, that make 40 nibbles!! The above will both easily coat 20.


So the wings will be in three parts. With a sharp knife, cut off the end skinny piece, there’s no meat in there, but freeze them to use in stock/gravy at a later date.


Again with a sharp knife, find the joint between the next two pieces and cut them in half.


Put the two pieces in the marinade, cover and leave for a couple of hours or over night in the fridge.


When ready to cook, pre heat the oven to 180degrees, put the wings on a baking tray with all the marinade juices and cover with foil.


Bake for 20mins then remove the foil, flip the wings over baste/brush with the juices and bake again, uncovered for another 15mins.


Check them to make sure they don’t burn, flip and baste again if needed.
