Brioche buns

An utter must have with a burger. End of.

The sweet poofyness of a homemade brioche bun is the thing that will set you apart from the rest and have your BBQ guests talking about for a long time!


Key to this…. Don’t forget the tray of water!!!

Ingredients

  • 390g strong bread flour

  • 60g plain flour

  • 2 1/2 teaspoons dried active yeast (approx 10g)

  • 2 tablespoons granulated sugar

  • 1 teaspoon salt

  • 1 egg, beaten

  • 240ml warm water

  • 60ml warm milk

  • 40g soft butter

  • 1 egg for egg wash once proved


Combine flours, yeast, sugar and salt into a large mixing bowl and mix well. Add the butter and mix with your fingers until it feels like breadcrumbs. Make a well in the middle.


In a jug mix the water and milk.


Using a fork, add the water/milk combo mix and the beaten egg a little at a time to the well you’ve made. Mix.


Once it’s a sticky dough, turn out onto a floured surface and knead for around 10mins until smooth and springy. Add flour if it gets too sticky but small amounts at a time so not to add too much.


Shape into a ball, put in a bowl with a splash of oil all over and cover with cling film for around an hour and a half or until it has at least doubled in size in a warm dry place.


Take the ball out and need again for a minute to knock the air out and then portion into your buns. This recipes makes 6/8 large or 10/12 small buns.


Prepare 2 baking trays lined with baking paper.


Place the shaped buns on your baking trays about 2 inches apart and cover with cling film for around an hour until they have nearly doubled in size again.


Pre heat oven to 400f/200c/180c fan.

IMPORTANT - Put a tray at the bottom of the oven with an inch of water in to add steam.


Once your buns are ready and the oven is up to temperature, remove the cling film and egg wash your buns. Be gentle so you don’t knock the air out of the second prove


Place in the oven for about 20mins until nicely browned. Cool on a rack and enjoy 😊
